Sweet & Simple Meatballs

I love easy and quick recipes.  And this is one of our favorites.   It is so simple, but yet VERY flavorful.  

This is a great one to make ahead or make to take for a get together.

Prep Time: 5 mins
Cook Time: 2 hours


  • 48 meatballs
  • 1 bottle Sweet Baby Rays Honey Barbecue sauce
  • 1 cup peach preserves
  • 3 tbsp honey
  • 1 tsp Frank's hot sauce

1.  Simple....add all ingredients into crock pot (minus meatballs) and stir together. 
2.  Once stirred together add in meatballs and cook on low for 2 hours.  
3.  SERVE!  Simple, not fuss.

My favorites from last week's link party was...(drum roll please!)

1. Brooklyn from Cook & Craft Me Crazy shared these wonderful Skinny Ranch French Fries.  For me I am more taken with the french fries than any dessert ever made...so seeing SKINNY in the title...I was SOLD!  

2.  Oh Mrs. Tucker shared these heavenly looking Vanilla Pudding Cinnamon rolls.  Yes...I believe we all should be drooling now.  Wow I want to visit her when she is serving these!!!  

3.  Kim from Made in a Day shared the Brookie Bars.  Another fabulous looking dessert.  Who can't resist desserts?  But a Brownie topped with Chocolate Chip Cookies...yes please!!!  SO simple and easy.  It's a must try!

4.  Brooklyn from Cook & Craft Me Crazy also shared these amazing looking Taco Cups.  Tacos in our house are almost a weekly event...but we try to do it differently each week of the month.  SO I love to find new ideas for our Taco Night and I love the way she makes the shells!  

5. Mindi at My Love to Create shared her Trash to Treasure table.  The before and after photos are amazing.  

6.  Emily at Nap Time Creations shared this adorable No Sew Birthday sign.  Reusable and great looking.

7.  April at What Makes Up My Life shared the Do It Yourself Ribbon Scarf.  So simple to make from an old t-shirt (and we all have those!)

8.  Lauren at The Thinking Closet shared her Vintage Purse Re-Do.  She gives step by step instructions on how she brought life back to this little gem!

9.  Beth at Whole New Leaf shared her New Office Shelving.  Very clever and a great space saver.  She also is re-doing her craft/office space.

12 Weeks of Mac N Cheese - week 12! (4 Cheese Exotic Mac N Cheese)

WEEK 12!!!  I can't believe it the whole 12 week series is over.  12 AMAZING Mac N Cheese recipes to share with you.  It ends with my absolute favorite...a creamy mac n cheese made with a few wonderful different cheese that has just the right amount of bite.  One of the things I love about this recipe is you can serve it right from the stove top OR you can prepare early and bake in an oven for reheating or even on a grill, like the Big Green Egg.  Makes for a great "Take to a Cookout" kind of recipe!

Prep Time: 5 mins
Cook Time: 20 mins
Total Time: 25 mins


  • 16 oz Pasta
  • 1/4 cup New York Cheddar Cheese
  • 2 cups Vermont Sharp Cheddar Cheese
  • 1 cup Bergenost (Buttery triple cream Muenster/Havarti style cheese)
  • 1/4 cup Pecorino Romano Cheese
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 1/2 tsp dry mustard
  • 1 pinch nutmeg
  • 4 cups milk
  • 2 bay leaf
  • 1 pinch pepper
  • 1 tsp hot sauce
  • 1 cup plain ruffle style potato chips crushed into small pieces


1.  Boil pasta over medium heat until al dente.  Drain and set aside
2.  Grate all cheeses and set aside

3.  In a saucepan over low heat melt 1/2 cup unsalted butter.
4.  Add flour and mix well.
5.  Add all seasoning and 4 cups of milk to include the bay leaf too.  

6.  Bring slowly to a boil stirring constantly.  Don't let heat up too fast. 
7.  Remove from heat, remove bay leaf and add in cheese & hot sauce and stir until a thick cheese sauce.

8.  Add into pasta and stir together.  

9.  You could serve from this point OR place in a oven proof baking dish and top with crushed potato chips.  We placed ours in a cast iron skillet and put on our Big Green Egg grill at about 300 degrees for about 5-10 minutes.  
If you are going to make ahead and then reheat via oven, it will need about 20 minutes in a 325 degree oven to reheat thoroughly.  If you place in oven immediately from saucepan, it will only need about 5-10 minutes to brown chips on top.  

10. ENJOY!!!  

I added a twist to mine and topped with Frank's Hot Sauce just before serving....oh it was perfect!

Big Green Egg - Lemon Pepper Wings

Lemon Pepper WIngs on Big Green Egg

We LOVE our Big Green Egg...have I said that before?  I am sure I have.  This weekend we cooked these yummy Lemon Pepper Wings on it.  We also made a whole chicken, and sweet potato crinkles.  I love how all the food turns out so moist and yummy.  I even created an Apple Crisp on the BGE this weekend.  It was to die for with vanilla ice cream (more on that later).  But on to this recipe!

Prep Time:  2 hours and 15 minutes
Cook Time: 35-45 minutes
Total Time:  3 hours


  • 2 1/2 lbs Chicken Wings
  • 3 cloves garlic
  • 1 pinch salt
  • 1/4 cup Olive Oil
  • 1 cup fresh lemon juice (or Real Lemon works too)
  • 2 tsp pepper
1.  Grate garlic into small pieces.  Place in a mortar and add a pinch of salt.  Grind together until it becomes a paste.  (This can also be done on a cutting board with the back edge of a spoon, if you don't have a mortar and pestle.  

2.  Heat olive oil in a saucepan until hot over a medium-low heat.
3.  Add garlic and allow to simmer.

4.  Add 1 cup of lemon juice and 2 tsp pepper and stir.  Remove from heat.

5.  Allow to cool to almost room temperature.
6.  Place wings in a large ziplock bag and pour in liquid.  

7.  Let rest at room temperature for 2 hours.
8.  Heat up Big Green Egg to 250 degrees.
9.  Place wings on grate over direct heat.  Save lemon sauce for basting.

10.  Cook wings for 35-45 mins until golden brown, basting every 10 mins.
11.  Serve and Enjoy!

Military Spouses are probably one of my favorite heroes of our world.  They are resilient, productive, unique, proud, creative, and the best multi-taskers I have ever met.  They can be Mom, Dad, Daughter, Friend, Battle Buddy, and Super Hero all at the same time, while cooking dinner, taking out the trash, helping with homework, budgeting the family finances, AND running a full time successful business (or two)!  OK, maybe I just made that sound like everyone's Super Hero Women....but I know I have truly met a few of these live and in action.  Not saying their life is perfect, but they definitely know how to make lemonade with the lemons life gives them.  

Now that I have that out of my system....onto introducing this week's Featured Spouse of the Week.  

Brittany is an Army wife, mother of three, and owns her own business named Brinneydee Designs and Photography.   You can connect with Brittany through her website or her Facebook page.  

I got a chance to do a short interview with Brittany.

1.  How did you get started? A few years back, we had a computer built for us by a friend. He installed Photoshop for me, since he knew I was big into digital scrapbooking at that time. It took me a while to get comfortable enough to use the program, but once I did, my digital scrapbooking projects quickly evolved into forum graphics and skins, as well as blog and website graphics and other graphic designs. I realized I absolutely loved it, and kept working at getting better. Today, I have an associate's degree in Web Design, and I'm 2 months away from finishing my bachelor's degree!

2.  Who was your biggest inspiration? My husband kept encouraging me to try different types of graphic design projects. He has been supportive since day 1, and I love him dearly for that.

3.  What's your favorite part of being a military spouse? I love the opportunities presented that may not be available to us if he hadn't enlisted, such as the healthcare, the opportunity to travel to places we have never been, etc. I have also made some of the most wonderful friends of my life since becoming a military spouse, and they are part of this life I will always be grateful for.

4.  How many years have you been a military spouse? This is our 4th year as a military family. Sometimes I still feel so much like a “newbie” to this life, but other times it feels like we've been a military family forever.

5.  Kids?  Animals?  We have two girls who are our little Drama Queen and Diva, and VERY soon our little princesses will have a prince joining them! :) [Editor's Note:  I am happy to announce that their "prince" joined the family just last weekend!  Congrats to Brittany and her family!!!]  We love animals, but since our youngest daughter is allergic, we can't have any furry friends anymore. :(

6.  What is the best part of your business/company that you would like to share with us?  The best part of my company is that every bit of my work is completely personalized to the customer. I don't use templates or piggy-back off other designs; when you work with me, your design is done completely from scratch, with you in mind. No one else out there will ever have the same design as you!

7.  Anything else you would like to share with us?  I love being able to carry my business with me everywhere we go. As a graphic designer, it's wonderful to know that no matter what, I always have a way to do what I love. :)
