Amazing Military Family! - The Williams

Today I would like to take a moment to bring to you an amazing Military Family that are doing amazing things.  My family met the Williams family almost 10 years ago.  We moved to Fort Campbell and Tim Williams was a classmate with our daughter Cami.  All through middle school they knew each other and that bond only got deeper as they both headed into high school and sports at Fort Campbell.  

In the summer of 2009, our heart broke.  We got the call while at cheerleading practice that Tim had dropped on the football field and was taken to the hospital.  We all were shocked and just prayed.  Feeling helpless my daughter really wanted to go to the hospital to be with Tim's family and friends.  Even through some of the best medical care, Tim went to heaven and from the very beginning his parents strength always amazed me.  Bill and Kim Williams were always parents who gave it their all to everything Tim was involved in, and continued to do so even after the loss of Tim.  Being a wonderful mentor to all of Tim's teenage friends who were so upset over the loss of their friend and assuring them all that Tim was up in heaven looking down and cheering them all on.

Bill and Kim continued to be a huge support to Fort Campbell High School and football team.  They have given back so much, that I wanted to take a moment to share their next project with you.  


Note from Bill Williams: 
In July of 2009, when our son Tim Williams went to Heaven, Kim and I wanted to find a way to give back to the players that were like Tim's brothers for so many years.  After much prayer and discussion, we decided to start a scholarship fund that would provid Offensive and Defensive Linemen a laptop to use in college.  There were no GPA requirements to be met, the only requirements were that the player had to be a lineman for the Fort Campbell Falcons and be accepted to a college (playing football at the next level was not something that was required either). 
Since the start of Laptops for Linemen, we've provided laptops for 15 graduating football players.  Another facet of the fund is that we treat the linemen to dinner at a local Japanese Steakhouse named Yamato's, it was Tim's favorite place to eat and it provides us a chance to sit down with the players and talk about what they're going to pursue in college and what they'd like to do beyond that. 
Each year, in order to keep the fund going, we hold a fundraiser for donations.   In years past, we had pancake breakfasts to raise money and everyone seems to enjoy the pancakes and sausage.  This year, our last year, we sold hot dogs, chili, nachos, and the popular walkin' tacos at Christian Way Farm, a local family-friendly farm in nearby Hopkinsville. 
After the first year of the fund, my wife and I decided, after more prayer, to add another level of giving through the Tim Williams Scholarship Fund.  One of the things that Tim wanted to do was to go on a mission trip to Mexico to spread the Gospel of Jesus.  So we added 'Young Men on Missions' and have assisted with funding for a former Fort Campbell player to take a mission trip to Fiji.  That portion of the scholarship fund has branched out to help college students that didn't know Tim personally go on mission trips to Africa and Honduras. 
Recently my wife and I decided that this year would be the final year that we accept donations for the Scholarship Fund.  We have a few more laptops to purchase for Falcons but will discontinue the fund when that's done.  



In a final effort, we will be partnering with a local Clarksville business, Milan Enterprises, to build a church in Guatemala in Tim's memory.  The owner of Milan enterprises, Leo Milan has been building churches there (and Mexico) for a few years now.  Leo was also a teenage-youth pastor at the church we attend while Tim was a teenager, so it seemed fitting to partner with him and his business to build this church, a building that will stand for a long time in memory of our son.  
We've asked for $100 from 80 of our friends and family to help raise the money to build the church.  We understand that not everyone can donate that much, so any little bit helps.    A location in Guatemala has already been picked out and work should commence soon.  We'll be creating a Facebook Group and adding everyone who donates to the church fund so they can see the progress of the build through its completion.
Kim and I are so thankful to the many people who have donated in the past and helped keep the fund going strong, we wouldn't have been able to provide so many laptops if it wasn't for them.   

A special thanks to the Williams Family for all that they have given back to so many.  To this day, all my kids remember Tim and his special smile.  They all gain strength from seeing how the Williams family have not only survived the loss of Tim to heaven but have glorified it with SO many great missions in his honor.

Tator Tot Casserole


Want EASY?  Need QUICK?  Wish it could still be extremely YUMMY?  This is a recipe for you.  We use this as a feel good meal in our house.  It is one of my kids favorites.  

Prep Time:  10 mins
Cook Time:  30 mins




Ingredients:

  • 2.5 lb ground beef
  • 3 tbsp ketchup
  • 3 tbsp worcestershire sauce
  • 1 Family Size Cream of Chicken soup
  • 2 cups of Mini Tator Tots


Directions:

1.  Brown hamburger in a skillet.  Drain and place back in skillet.
2.  Mix in soup, ketchup, and worcestershire sauce into hamburger.
3.  Once completely mixed and cooked down a little on low, place in an oven safe casserole dish.
4.  Preheat oven to 350 degrees.
5.  While oven is preheating, place tator tots on top of casserole.  
6.  Cook for 25-30 minutes in oven until tator tots are completely cooked.  
7.  Serve with your favorite fresh vegies.  


Hope you try and enjoy.  Be sure to add your own twist like, adding onion, celery, garlic etc.  My boys like it more on the plain side, but I bet it would be great with those additions too!

Miss Me? Cinnamon Rolls!!!


Oh YUMMY...don't these Cinnamon Rolls look amazing?
We made a familiar Sticky Bun recipe (click here for the recipe) last night and I thought I would reshare these with you.  Last night's version turned out so well, I thought I would share a few new photos of these too.  Good news is it helped me stay busy and not miss my daughter who had to depart again from home yesterday to head off to summer camp where she is a wonderful counselor.  She is so excited to go bless the kids of Winshape Camp this summer and I know that they all will be a huge blessing to her.  We look forward to her return again at the end of summer!!!  :O)  


Miss Me?
Well as I said above, we have been enjoying our daughter home for the last two weeks.  Because she goes to college about 1200 miles away, I like to be able to drop everything and spend time with her when she is here.  We had an amazing two weeks.  We snuggled up and got caught up on a lot of DVR shows we (and she) hadn't stayed up with.  We also went to a few new movies she wanted to see.  We went shopping...and boy did we have fun shopping all over CT and even some in NY!  Part of our shopping missions was to make sure she was ready for the fun theme days at her summer camp this summer.  We had a blast creating a Repunzel costume, mimicking from Tangle movie, which is one of my daughter's favorites.  (I will share later the step by step "how-to's" with you!)  

Also as you can see in the photos above, I got to enjoy a fabulous Mother's Day with all three of my kids home.  They surprised me with the driveway artwork.  They also created my favorite dessert all by themselves, White Chocolate Covered Strawberries!!!  So yummy.  And my daughter even did ALL our laundry on Mother's Day for the week as a special gift to me!  I also got to upgrade my iPhone 4 to an iPhone 5 for Mother's Day.  I can't beat that.  

Also the fun photo above with her lip out and the adorable patriotic dress, was because she wanted a dress just like it and it was of course too small.  She LOVEs these cute little dresses....and we had a great time just admiring them!  :)  We also got to visit a friend in NY and go through an Outlet Mall that had any outlet store you could imagine.  We were probably the most excited over the Under Armor, Vineyard Vines, Columbia, Spyder stores and SO much more!!!  

So as you can see we have been busy and enjoying our time as a family.  I have SO loved it, but today I am officially back to my normal schedule of posting.  I have a great easy dinner recipe to share with you tomorrow.  And an absolutely amazing story of a great military family doing wonderful things for others that I will highlight later in the week.  So stay tuned and come back to see what else is on the horizon.  Please consider signing up via email so you don't miss what is coming next!

Doritos Chicken Nuggets



This was a find that we discovered on Pinterest.  My son's love for Doritos made this a must try!  I found the original idea from The Black Peppercorn blog.  I took one look at this on Pinterest and thought...oh as much as my family LOVES our panko breaded chicken, I bet that they would love this version even more.  I altered The Black Peppercorn's recipe a little to our liking, but be sure to check out their original recipe too!

Here is what we came up with.

Prep Time:  15 mins
Cook Time:  35 mins
Total Time:  50 mins

Ingredients:

  • 1lb of boneless skinless chicken tenders
  • 1/2 bag of your favorite Doritos flavor
  • 1 cup all purpose flour
  • 1 tsp pepper
  • 1 tsp garlic salt
  • 2 eggs
  • 1/3 cup milk
  • 1 tsp Franks Hot Sauce

Directions:
1.  Cut chicken tenders into bite size pieces.  Preheat oven to 350 degrees.
2.  Mix flour with pepper and garlic salt place in a shallow bowl.
3.  Mix 2 eggs, 1/3 cup of milk, and 1 tsp Franks Hot Sauce together in another shallow bowl.
4.  Crush doritos in a slightly opened ziplock baggie.  I used a meat tenderizer to crush them.  
5.  Once completely crushed placed in a 3rd shallow bowl.  (NOTE: Not to plug William Sonoma stuff, but in case you are wondering, our batter dishes come from William Sonoma and I love them because they connect on one side so that as I transfer from bowl to bowl, nothing leaks to the countertop!)
6.  Now dip chicken into flour first.
7.  Then into egg mixture (I try and keep one hand for dry ingredient and one hand for wet)
8.  Lastly into Doritos mixture, and completely coat.
9.  I sprayed a cookie sheet with Pam cooking spray and then placed the chicken onto it.  
10.  Bake chicken in oven for about 35 minutes, until chicken temperature is at least 165.  (This depends on thickness of chicken....thinner chicken cooks faster)
11.  Serve and enjoy!

Options:  Serve with ranch.  OR toss in your favorite sauce, like Franks Hot Sauce, Barbecue, or Honey mustard sauce.  



This recipe is great because it is simple and easy.  It is a great fast way to make great tasting baked chicken.
